Our Story

“And, when you want something, all the universe conspires in helping you to achieve it.”

In 2017 husband-and-wife team, Chef Jeremy Hansen and Becca Russell, entered the Mobile Food Truck scene in Portland, OR with their first truck, Pidgin Hole. The vision was always a fleet of trucks – each with a different food concept, utilizing diverse flavor profiles where Chef Jeremy would showcase his culinary skills. It would take five years, and plenty of hard-earned lessons, for this vision to come to life.

 

Following a series of unfortunate events, including the COVID-19 pandemic, inflation, staffing shortages, and topped with Chef Jeremy finding himself hospitalized upon suffering injuries as a pedestrian in a hit-and-run accident, expansion seemed a pie-in-the-sky dream. 

 

But, like the quote above from their favorite story about having faith in the path you’re on, the universe conspired and things fell into place in Spring of 2022 to make Alchemy Sandwich Co. a reality. A quick inquiry with their booking agent led her to connect them with a fellow foodtrucker who was looking to downsize. Seven weeks later, on June 25, 2022, Alchemy hit the ground running with its first event, and it’s been go-go-go ever since! 

 

We can’t think of a greater lesson in trusting the process than the five years between the launch of Pidgin Hole and Alchemy Sandwich Co. What a ride it’s been! Follow along to see where the road leads…
